Tender salmon, roasted carrots, and fluffy couscous: this dish has a fresh yet warm aroma. The carrots caramelize slightly in the oven, adding a touch of sweetness, while the couscous absorbs the lemon and herbs beautifully. The whole dish is light, nutritious, and quick to prepare—exactly what you want on a weeknight.
Since this recipe doesn’t require regular milk or cream, it’s a great fit for a dairy-free kitchen. The flavors remain pure and fresh, and you just use ingredients from the supermarket. Handy if you’re avoiding cow’s milk or want to eat lactose-free for a day—just check the label and you’re all set.
Preparation
Step 1: Roast the carrots
Preheat the oven to 200 degrees. Peel the carrots and cut them into equal-sized pieces. Toss them with oil, salt, and pepper, and roast them for 20 minutes until they are golden brown and tender.
Step 2: Prepare the couscous
Bring water to a boil and pour it over the couscous. Let it sit covered for 5 minutes, then fluff it with a fork until the grains are light and fluffy.
Step 3: Cooking the salmon
Heat a little oil in a skillet. Cook the salmon over medium heat for 3 to 4 minutes per side until it’s just cooked through. Don’t overcook it—that way, it’ll stay juicy.
Step 4: Add lemon
Grate some lemon zest and squeeze half the lemon. Mix this into the couscous for a fresh flavor. Taste it and add a little salt or pepper if needed.
Step 5: Serving
Spoon the couscous onto plates, top with the roasted carrots and salmon, and drizzle a little extra lemon juice over it. Serve immediately, while still warm.
